Vegetable Noodles

Discription:This is very easy and tasty recipes .Try it and Enjoy!!
Ingredients:
  • 1 packet egg noodles (boiled, drained in cold water and tossed in 1-2 tsps oil)
  • 1/4 cup spring onions, finely chopped
  • 1 onion sliced
  • 2 cups julienned vegetables (carrots, beans, cabbage and capsicum)
  • 1 tsp soya sauce
  • 1 tsp green chilli paste (optional)
  • 1/2 tbsp vinegar
  • pepper pwd as required
  • salt as required
  • 1 1/2 tbsps sesame oil or peanut oil
How to make:
  • Heat a tbsp and a half of sesame oil in a large wok and once the oil is piping hot, add the spring onions and sliced onions and stir fry for 1 mt on high.
  • 2 Add the rest of the vegetables and toss them on high heat for 4 mts.
  • 3 Add salt, pepper pwd, soya sauce and combine.
  • Add the drained noodles and combine well.
  • 4 Add vinegar and toss the noodles and vegetables on high heat for a few seconds. 
  • Turn off heat. 
  • Garnish with chopped spring onion greens and serve hot with vegetables in spicy garlic sauce.

Chinese Chicken and Broccoli Recipe

Discription:Chicken bits and broccoli florets stir fried with a delicious sauce. The sauce is a basic combination of Asian flavors such as hoisin sauce, oyster sauce, chicken broth and garlic. Red pepper flakes are added for a little heat and can be adjusted to your taste. If you choose the broccoli can be cooked ahead to save a little time. Normally this dish is not breaded. You could also deep fry the chicken bits and cook the sauce separately. Serve with white rice. Enjoy.

Ingredients:
  • 1 1/2lbs boneless skinless chicken breasts (cut into small chunks)
  • 1 ½ tablespoons sesame oil
  • 2 tablespoons garlic (chopped)
  • ¼ teaspoon dried red pepper flakes (or more to taste)
  • 4 cups fresh broccoli florets
  • 6 tablespoons chicken broth (divided)
  • 1 tablespoon sesame oil
  • salt and pepper
  • 5 green onions (sliced)
  • ¼ cup hoisin sauce
  • 3 tablespoons oyster sauce
  • Sesame seeds (for garnish, optional)
How to make:


Step 1: Heat a wok (or large skillet) over medium-high heat. Add 1 ½ tablespoons sesame oil. Add garlic and dried red pepper flakes. Stir fry for 30 seconds. Add broccoli florets and 4 tablespoons chicken broth. Stir fry broccoli for 2 minutes. Remove from pan and set aside.
Step 2: Add a little more sesame oil to the wok (about 1 tablespoon). Season chicken bits with salt and pepper. Add to the wok and cooked until chicken is fully cooked (about 3-5 minutes).
Step 3: Add in remaining 2 tablespoons of chicken broth, oyster sauce, and hoisin sauce. Add broccoli mix well and cook until the mixture has become well heated. Serve with white rice.

Peanut Butter Noodles Recipe

Discription:Peanut butter and pasta, the combination might seem odd to you but its delicious. Peanut butter noodles are a quick and easy meal.You can add extra vegetables as well. This recipe is all about the sauce; the sauce is sweet, salty and has just the right amount of kick. For the noodles, you can really use whatever type of pasta you prefer (spaghetti, linguini, vermicelli, ect.). If you are looking for a different take on your typical pasta dish, be sure to give this one a try. Enjoy.

Ingredients:
  • 2 cooked boneless skinless chicken breasts (sliced or shredded, optional)
  • 8 ounces pasta (such a spaghetti, linguini, or vermicelli)
  • ¼ cup peanuts
  • ¼ cup green onions (chopped)
  • Sauce-
  • ½ cup chicken broth
  • 1 ½ tablespoons ginger root (minced)
  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 1 ½ tablespoons honey
  • 2 teaspoons hot Chile paste (optional)
  • 3 garlic cloves (minced)
How to make:
Step 1: Bring a large pot of water to a boil. Add noodles and cook according to package directions. Drain.
Step 2: While noodles are cooking in a medium saucepan combine chicken broth, ginger, garlic, soy sauce, peanut butter, honey, and Chile paste. Cook over medium heat while stirring until the peanut butter melts and mixture is smooth and well blended.
Step 3: Add noodles into a large serving bowl, add chicken, pour the sauce over the noodles and toss to coat. Garnish with green onions and peanuts.

Sesame Noodles Recipe

Discription:Here is yet another fantastic Chinese pasta dish- Sesame noodles. you can serve this as a side dish as it calls for no meat at all, although you could add cooked chicken if you wanted. This recipe is very simple and the only work is preparing the sauce and cooking the noodles. You can use a variety of different pastas, spaghetti, linguini, vermicelli, ect. If you enjoy cooking Asian dishes chances are you already have quite a few of these ingredients on hand already. This recipe calls for safflower oil, if you cannot find it (or if you just prefer) you can use vegetable oil instead. This makes a perfect side dish for any Asian meal. Enjoy.
Ingredients:
  • 1 (16 ounce) package pasta noodles (linguini, spaghetti, ect)
  • 6 garlic cloves (minced)
  • 6 tablespoons sugar
  • 6 tablespoons safflower oil (or vegetable oil)
  • 6 tablespoons rice vinegar
  • 6 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons chili sauce
  • 6 green onions (sliced)
  • 1 teaspoon sesame seeds (toasted)
How to make:
Step 1: Cook pasta noodles according to package directions. When pasta has finished cooking, drain and put into a large serving dish.
Step 2: While pasta noodles are cooking. Place a saucepan over medium-high heat and add safflower oil, garlic, vinegar, sugar, soy sauce, sesame oil and chili sauce. Bring to a boil and stir until sugar dissolves. Remove from heat and pour sauce over pasta and toss to coat. Garnish with green onions and sesame seeds.

Baked Ziti Recipe

Discription:There are so many recipes for baked ziti out there but this one is so simple and delicious.You can use any type of spaghetti sauce you want, store bought or even some of your own homemade.f you cannot find ziti pasta, rigatoni will work as well. Serving with garlic bread is a must. If you are looking for a fantastic Italian recipe, give this one a try. Enjoy.


Ingredients:
  • 1lb ground beef
  • 1 cup onion (chopped)
  • 2 garlic cloves (minced)
  • 1 (32 ounce) jar meatless spaghetti sauce
  • 1 cup chicken broth
  • 1 teaspoon oregano
  • 1 (16 oz) package ziti pasta (cooked and drained)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
How to make:


Step 1: Preheat the oven to 350 degrees. In a large skillet add ground beef, onions and garlic. Cook over medium high heat stirring frequently until the beef is browned. Stir in spaghetti sauce, chicken broth and oregano. Reduce heat and simmer for 10 minutes.
Step 2: Stir in 1 cup of sauce into the cooked ziti noodles. Spoon ½ of the ziti mixture into a 13×9” baking dish. Sprinkle 1 ½ cups mozzarella cheese and ½ cup parmesan cheese over the top of the ziti mixture. Top with 2 cups of the sauce, then add remaining ziti mixture and top that with the remaining sauce.
Step 3: Cover with aluminum foil and bake at 350 degrees for 20 minutes. After 20 minutes remove from oven, uncover and sprinkle the top with the remaining mozzarella and parmesan cheese. Return to over and bake for 10 minutes or until the cheese has melted.

Chicken And Pasta Salad

Discription:This is healty and tasty chicken and pasta salad.plz try it!!!!
Ingredients
  • 2 cups pasta
  • 1 lb boneless chicken breasts
  • 1 cup low-fat yogurt
  • 1 cup red seedless grapes, washed and sliced
  • 1 cup baby peas, cooked, drained and cooled
  • 2 celery ribs, thinly sliced
  • 1 teaspoon mustard
  • salt, to taste
  • pepper, to taste
How to make:
  •  Cook the chicken breasts until tender; drain and chill.
  •  In the meantime, in a large pot cook the pasta until al dente; drain and rinse under cold water.
  • Mix the mustard, yogurt, salt and pepper into the pasta.
  • Cut the chicken into bite-sized pieces and add it to this mixture.
  • Fold in the pasta, grapes, peas and celery.
  • Toss well, cover and refrigerate for about an hour; serve.



Hakka Noodles

Discription:“Chinese Food” in India is liked by almost everyone. It’s a combination of Chinese recipes with Indian flavors. In cities like Mumbai , Pune etc you will find a small eatery serving this food. This cuisine is basically derived from very well blended Indian-Chinese cuisines. Chinese-Chinese is very different from what we Indians call Chinese. Indo-Chinese uses Indian spices, herbs as well as Chinese sauces like soy, garlic-chili etc. The techniques are also indo – Chinese. Scallions and soy sauce add the much required Chinese touch to these dishes.
This cuisine is embraced by Indians whole heartedly that chefs have come up with a Chinese influenced chat item It is called “ Chinese Bhel” ( will be posted shortly here). Its made from noodles, and just like regular Bhel.


Ingredients
  • 2 cups boiled noodles
  • 3 dried red chilies
  • 1 small bunch spring onion
  • ½ cup finely chopped carrots
  • 1 small capsicum thinly sliced
  • 2 tsp garlic finely chopped
  • 2 tbl spn soy sauce
  • 1 t spn chilli paste ( ** can be substituted with Chilli sauce)
  • 2 tbl spn oil
  • 1 t spn Red wine vinegar
  • Salt to taste
How to make:
Heat oil in a wok. When the oil is smoking add the vegetables. Simmer and fry them till almost done. Add soy sauce, vinegar and salt. Now add noodles and mix very well. Serve Immediately.

Gobi Manchurian
Ingredients :
  • 2 cups cauliflower florets
  • 1 Tbl Spn Corn flour
  • 1 Tbl Spn all purpose flour
  • 1/2 tbl spn ginger-garlic paste
  • salt as per taste
  • water

How to make:
Mix all the above ingredients into a thick paste. All the broccoli florets. Cover them all over with the batter and deep fry them.

For the sauce:

  • 1 tbl Spn soy Sauce
  • 1 tbl Spn tomato ketchup
  • 1/4 tbl spn chili sauce
  • a little vinegar
How to make:
Mix all the above ingredients. The sauce is ready.

You will also need a spoonful of corn flour mixed into a very smooth, thin paste. ( this is used to thicken the gravy).

Method:

Heat a wok. Add a few drops of oil, add chopped onions. Add chopped capsicum. sauté for a few more minutes. Add sauce, broccoli and water. let it boil for 5 mins. Simmer and add corn-flour paste. This thickens the gravy. Add salt as per taste.

Cheesy Vegetable Lasagna - Pasta

Discription:Egg plants, zucchini, onions, tomatoes and garlic made for the filling which merged with a cheesy cream sauce for a rich flavor. The pasta noodles I used are whole wheat. If I use no-boil pasta, I usually boil the pasta for a few mts before preparing the lasagna.
Ingredients:
  • 12 lasagna noodles
  • 3 tbsps olive oil
  • 2 large onions, finely chopped
  • 4 large tomatoes, crushed
  • 3 large brinjals/eggplant, sliced
  • 2 zucchinis, sliced
  • 8-9 cloves garlic, minced
  • 1-2 tsps red chilli pwd (adjust)
  • 1/2 tsp sugar (optional)
  • 1 tbsp dried parsley
  • salt to taste
  • 1/4 cup mozzarella cheese, grated
  • 3/4 cup parmesan cheese, grated (if unavailable, substitute with Amul cheese)
For sauce:
  • 3 tbsps maida/all purpose flour
  • 2 tbsps low fat butter
  • 2 1/2 cups low fat milk
  • salt to taste
  • small pinch of nutmeg pwd
  • 2 tbsps grated parmesan cheese (if unavailable use Amul cheese)
How to make:
  • Bring a large pot of salted water to a boil. Add pasta and cook for 4-5 mts (for no-boil pasta there is no need to boil but I like to boil for 5 mts). If using ordinary pasta, cook according to instructions on the box or until al dente, drain. Drop them into cold water (add a tbsp of olive oil) for a few seconds and remove them and place on kitchen towels.
  •  Heat 1 1/2 tbsps of olive oil in a vessel, add the onions and crushed garlic and saute till the onions turn transparent. Add the crushed tomatoes, sugar and salt. Cook for 6-7 mts and turn off heat. Keep aside.
  • Heat 1 1/2 tbsps of olive oil in another vessel, add brinjal slices and zucchini slices, saute for 8-9 minutes till they are almost cooked. Turn off heat and keep aside.
  •  While the onion-tomato base cooks, prepare the white sauce. Heat a pan, on low flame, add the butter and let it melt. Add flour and keep stirring using a hand whisk over a low flame till well blended. Slowly add the milk, stirring continuously. Next add the grated cheese. On medium heat continue to stir until you have a nice smooth consistency sauce. Once in a while, remove the vessel away from the heat for a few seconds and place it back while stirring. Season with salt and nutmeg pwd. Keep aside.
  • Spread some sauce and tomato onion mixture at the bottom of the baking dish, followed by pasta, spread tomato onion mixture, the sauteed vegetables, sprinkle some dried parsley, pour some white sauce all over, then layer with grated mozzarella and parmesan cheese. Repeat again with a layer of pasta, followed by onion-tomato mixture, a layer of sauteed vegetables, sprinkle dried parsley, pour some white sauce all over, followed by grated mozzarella and parmesan cheese and top with pasta. Pour the remaining prepared white sauce on top. Sprinkle a few tbsps of mozzarella and parmesan cheese.
  • Bake in preheated oven at 175 C for 35-40 mts, or until lightly browned on top. Cool for approx 10-12 mts before serving.

Citrus Peanut Noodles Salad

 Discription:This is a perfect noodle salad to take to summer get-togethers instead of the same old boring potato salad. It's a great base to add your favorite vegetables to, or even some shredded chicken if you're a carnivore.
 Ingradients:
  • 8 ounces of your favorite noodles (I used linguine)
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp chili garlic sauce
  • 1 tbsp lime juice
  • zest and juice of 1 orange
  • 2 tsp finely minced ginger
  • 1 tbsp creamy peanut butter
  • 1/4 c fresh cilantro, chopped
How to make:
  • Cook noodles in well-salted water until al dente.
  • Drain, rinse, and place in large bowl. 
  • In food processor, combine remaining ingredients. 
  • Combine until well pureed.
  • Pour over noodles and chill in the refridgerator for a bit. 
  • Add cilantro just before serving.
