Chimichanga Recipe

Discription:
If you are not familiar with the Chimichanga it is basically a burrito that is deep fried. This is a fairly lengthy recipe that requires a bit of work, but in the end you should find that it’s well worth it. If you like Mexican food, these should be a must try for you. If you don’t like the idea of deep frying this makes great burrito meat as well.. For the meat, if you can find already cut up beef stew meat that would work well, and save a lot of time.  Enjoy!!
Ingredients:
  • 3 lbs pound boneless beef rump (cut into one inch cubes)
  • 1 tablespoon chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon all-purpose flour
  • 2 tablespoons canola oil
  • 2 onions (chopped)
  • 3 teaspoons minced jalapeno pepper
  • 2 tablespoons garlic (chopped)
  • 2 ¼ cups beef broth
  • ¼ cup red wine vinegar
  • 1 (15 ounce) can pinto beans (drained and rinsed)
  • 1 (15 ounce) can black beans (drained and rinsed)
  • ¼ cup lime juice (about 3 limes)
  • ½ cup fresh cilantro (chopped)
  • 10 (11 inch) flour tortillas (warmed in the microwave)
  • Oil (for frying)
  • 2 ½ cups shredded pepper jack cheese
  • 2 cups iceberg lettuce (shredded)
  • 1 cup sour cream
  • ½ cup tomatoes (diced)
How to make:
step 1: In a large stock pot over medium-heat heat. Add 2 tablespoons of canola oil. Add beef cubes and brown on all sides. Add onions and jalapeño pepper and sauté for 4 to 5 minutes. Add garlic and sauté for 1 additional minute. Mix in chili powder, cayenne, garlic powder, and flour. Cook stirring frequently for 2 to 3 minutes. Add beef broth and red wine vinegar. Mix well and bring to a boil. Reduce heat to medium-low and simmer for 2 hours.
Step 2: When the meat is fork tender, shred the beef with 2 forks. Add pinto and black beans, lime juice and cilantro. Cook until heated through. Remove from heat.

Step 3: In a large deep skillet add about 1” of oil. Heat the oil to 325 degrees or until the oil is hot enough to frying. While the oil is heating prepare the chimichangas. Lay out a flour tortilla and fill the bottom half with ¾ cup of the beef/bean mixture (if the beef mixture has a lot of liquid, scoop it out with a slotted spoon). Top with about 2 tablespoons of pepper jack cheese. Lift the edge of the tortilla and roll it over the filling to secure it. Fold in both sides and continue rolling until you reach the opposite end. Place a skewer threw the seam side of the burrito to secure it (can also use toothpicks). Repeat with the remaining tortillas.
Step 4: Lower chimichangas into the hot oil and fry for 2 minutes on each side or until golden brown. Drain on paper towels. Fry in batches of 4. Serve with lettuce, tomato, and sour cream.

Sloppy Joes Recipe

Discription:Sloppy Joes are an American classic and favorite. The great taste of that sweet tomato sauce with the hamburger and vegetables is just too good to pass up. Sloppy Joes make a quick and easy meal if you are in a rush. Many of you may have made your own before, or used a canned sauce. This is so much better than a canned sauce. This recipe might be a little different because of the addition of mushrooms. If you do not want mushrooms in your Sloppy Joes, feel free to leave them out.These are great for parties or game day. Enjoy.!!
Ingredients:
  • 1lb ground beef
  • 2 stalks celery (finely chopped)
  • 1 small onion (chopped)
  • 8 ounces fresh mushrooms (sliced)
  • 1 green bell pepper (seeded and chopped)
  • 1 (8 ounce) can tomato sauce
  • ¼ cup ketchup
  • ¼ cup barbeque sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dry mustard
  • salt and pepper (to taste)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon vinegar
  • Sliced provolone cheese
  • Hamburger buns
How to make:
Step 1: In a large skillet over medium high heat brown ground beef, celery, green pepper, mushrooms, and onion. Drain any excess fat. Stir in tomato sauce, ketchup, barbeque sauce, brown sugar, dry mustard, salt and pepper, Worcestershire sauce, and vinegar.
Step 2: Cover and simmer for 15-20 minutes stirring occasionally. If after 20 minutes the mixture still seems to watery, simmer for a little longer until the mixture has thickened.
Step 3: Serve on a bun and top with a slice of provolone cheese.

Asian Meatball Recipe

Discription:This was more of a test than anything and id say it had its up and downs. We definitely had some mixed reviews. Hit or miss, you decide.Try it and Enjoy!!!
Ingredients:
Meatballs-

  • 1lb lean ground beef
  • ½ cup white onion (minced)
  • 1 egg
  • 3 fresh garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red chili pepper flakes
  • 1 tablespoon soy sauce
  • 3 tablespoons flour
Noodles-
  • 1 (6 oz) Package rice stix (also called vermicelli rice noodles)
  • 1 teaspoon sesame oil
  • 2 fresh carrots (peeled into strips)
  • 1 bunch of green onions (sliced into strips)
  • 1 (14 oz) can of beef broth
  • soy sauce (to serve)
How to make:
Step 1: Combine meatballs ingredients in a bowl, mix well and form 1 to 1-1/2 inch meatballs.
Step 2: Place the meatballs in the oven and bake at 350 degrees for 25 minutes or until fully cooked.

Step 3: Rinse the rice noodles until they go slightly soft and set aside. Slice the green onions into 1” strips. Peel the carrots and then use your peeler to peel all the way down the carrot making long thin strips.
Step 4: Heat sesame oil in a skillet over medium heat and stir fry vegetables for 3 minutes until the carrots go limp.
Step 5: Add beef broth and rice noodles to the skillet and bring to a boil. Cook while stirring until the beef broth is absorbed and the noodles are soft. Put meatballs on top of noodles or mix them together and serve with soy sauce if desired.

Orange Beef Recipe

Discription:If you are in the mood for some Chinese, you might want to try out this orange beef recipe. This dish consists of crispy strips of beef coated with a delicious orange sauce. Probably the biggest challenge of this dish is getting the strips of beef crispy.The sauce is very simple to make, if you have a problem getting the sauce to thicken up, mix a bit of cornstarch with some cold water and pour it In, a little at a time until the sauce has reach the desired thickness.
Ingredients:
  • 1 1/2lbs beef top sirloin (sliced into thin strips)
  • ¼ cup cornstarch
  • 2 cups oil (for frying)
  • 1/3 cup white sugar
  • 1/3 cup rice wine vinegar
  • 1/3 cup orange juice
  • 1 teaspoon salt
  • 1 tablespoon soy sauce
  •  2 teaspoons orange zest
  • 3 tablespoons fresh ginger (grated)
  • 1 ½ tablespoons garlic (minced)
  • 1 bunch green onions (sliced)
  • Broccoli florets (cooked)
  • 1 cup long grain rice (cooked)
How to make:
Step 1: Coat beef strips with cornstarch and allow to sit for 30 minutes.  In a small bowl mix sugar, rice vinegar, orange juice, salt, and soy sauce. Set aside.
Step 2: Heat oil in a deep fryer (or wok) to 375 degrees. Fry beef strips in batches until crispy and golden brown. Drain on paper towels. Set aside.
Step 3: Heat a couple tablespoons of oil in a wok, add orange zest, ginger and garlic, stir fry for 20 seconds. Add the soy sauce mixture to the wok, bring to a boil, and cook until the mixture has thickened. Coat the beef strips with the sauce, top with green onions. Serve with broccoli florets and on top of white rice.
(Makes 5 Servings)

Buffalo Chicken Dip Recipe

Discription:This is another great recipe for buffalo chicken fans. Buffalo chicken dip combines the amazing taste of spicy Buffalo wings with a nice cream cheese oriented dip.This recipe is very simple and only requires mixing and the oven basically does the rest of the work for you. For the hot sauce, you can adjust the amount of heat by the type of hot sauce you get.This is a great recipe for parties and is sure to get eaten up fast. Enjoy.
Ingredients:
  • 2 (8 ounce) packages cream cheese (softened)
  • 1 (10 ounce) can chicken (drained, can also used cooked fresh cubed chicken)
  • 1 cup ranch dressing
  • ¾ cup red hot sauce
  • shredded cheddar cheese (for topping, as much as you want)
  • Tortilla chips (scoops, or whatever you prefer)
How to make:
Step 1: Pre-heat the oven to 350 degrees. In a bowl beat cream cheese, ranch dressing and hot sauce until smooth. Fold in chicken. Spray a pie plate with cooking spray and pour the chicken mixture into it.
Step 2: Place into the oven and bake at 350 degrees for 15 minutes.
Step 3: Remove from the oven and add cheddar cheese on top. Bake for an additional 10-15 minutes. Serve hot.

Beef biryani recipe

Discription:Haven't got time to faff around making an authentic biryani? Try this ultra fast method for an Indian dish of beef and rice.
Ingredients
  • 150g basmati rice
  • 410g can lentils
  • Fresh coriander
  • 500g pack minced beef
  • 425g jar balti curry sauce
  • Mango chutney
How to make:
  • Cook 150g basmati rice in boiling, lightly salted water for 10-12 minutes, until al dente.
  • Drain well and tip into a large bowl. 
  •  Add 410g can lentils, drained, and a good handful chopped fresh coriander.
  • Gently mix together and season to taste.
  • Meanwhile, heat a large, deep frying pan over a high heat. 
  • When hot, add a 500g pack minced beef and cook for 5 minutes, stirring, until browned.
  • Stir in a 425g jar balti curry sauce, then quarter-fill the jar with water and rinse out into the pan.
  • Simmer for 3-4 minutes – you want to keep the mince fairly juicy
  • Add the rice mixture and gently mix everything together.
  • Divide between plates and serve with mango chutney and poppadoms, if you like.

Ingredients
  • 1 bone-in beef rib roast (4 to 5 pounds)
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 small onion, sliced
  • 6 to 8 bacon strips
How to make:

  •  Place roast, fat side up, on a rack in a shallow roasting pan. Rub with garlic, salt and pepper; top with onion and bacon.
  • Bake, uncovered, at 325° for 2-3 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°).
  • Transfer to warm serving platter. Let stand for 10-15 minutes before slicing. Yield: 10-12 servings








Barbeque Burgers Recipe

Discription: These burgers consist of beef patties topped with sharp cheddar cheese, onion rings, barbeque sauce and slices of bacon. Try and find a good brand of BBQ sauce or even make your own. The highlight of this recipe is the crispy onion rings, they are very easy to make and extremely delicious.Enjoy!!

Ingredients:
  • 2lbs ground beef
  • 12 slices bacon (cooked)
  • 12 slices sharp cheddar cheese
  • Barbeque sauce (to serve)
  • 1 Vidalia onion (sliced into rings)
  • 1 ½ cups flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ¾  teaspoon cayenne pepper (or less)
  • 1 cup butter milk
  • 6 hamburger buns
  • Oil (for frying)
How to make:

Step 1: To make onion rings- In a pie plate or shallow bowl combine flour, salt, pepper, and cayenne. Dredge onion rings in the flour mixture until evenly coated. In another bowl add butter milk and season it with a little salt and pepper. Dip floured onion rings into the buttermilk and then coat with the flour mixture again. Add oil to a deep pan, just enough to cover the onion rings (or you can use a deep fryer for this). Heat oil to 360 degrees and fry onion rings in batches until golden brown on both sides (about 4 minutes). Drain on paper towels. Set aside.

Step 2: Shape ground beef into 6 patties. Season with salt and pepper to your taste. Fry in the pan with a little bit of oil (or on the grill). Cook until burgers are fully cooked or not longer pink inside. In the last couple minutes of cooking, top each burger with 2 slices of cheese, wait until cheese has melted and remove from the pan.
Step 3: To assemble burgers – Place a patty on the bottom half of a bun. Top with onion rings; add barbeque sauce and 2 bacon slices to each burger. Add the top half of the bun.
(Makes 6 Burgers)
